Umpqua Valley Spring Lamb Dinner

We're excited to showcase Umpqua Valley Lamb, sourced from a cooperative of dedicated farmers in Oregon. These farmers are committed to raising, butchering, and offering some of the highest-quality lamb in the country. Following a European farming tradition, the lambs are thoughtfully finished on clover and processed at approximately 6 months of age. The Umpqua Valley community prioritizes environmentally sustainable methods in their pastures and water sources, ensuring the humane treatment of their animals. With a trusted reputation for delivering 100% grass-fed lamb, Umpqua Valley sets a standard previously only found in Oregon.

For the rare and extremely special occasion, we're delighted to introduce a spring-inspired menu curated by Chef de Cuisine Nick Vollono. Chef Vollono has meticulously crafted a multi-course experience with spring lamb as the centerpiece of each dish. Complementing this culinary journey are wine pairings expertly selected by Master Sommelier Jeremiah Morehouse.

Italy’s Piemonte region is renowned for its cuisine and acclaimed wine regions of Barolo and Barbaresco. Bruno Giacosa stands out as the foremost producer of Nebbiolo, showcasing both the king and queen of wines. Inheriting the family estate in 1961, Bruno honed his craft, elevating its status to among the most coveted in Italy. Following his passing in 2018, his daughter Bruna carries on his legacy, skillfully blending traditional methods with modern technology to craft the region's finest expressions.

Join us as we welcome Daniele Sbordi of Folio Fine Wine Partners for two nights, as she presents and pours the iconic wines of Giacosa, paired with multi-course menus inspired by Piemonte, Italy.
